Ingredients
- 1/2 cup raw cashews
- 1/2 cup raw pecans
- 12 pitted dates
- 1 cup unsweetened shredded coconut
- 1 TBSP water
Instructions
- Add the nuts into a food process and pulse until finely chopped.
- Add in the dates, breaking up (or chopping up roughly) as you go. It will blend easier. Pulse until combined.
- Add in the shredded coconut and water and continue to pulse until the mixture comes together and you can easily make a ball that sticks together in your hands.
- Line an 8×8 pan with parchment paper and work the mixture in to an even layer in the pan. Let it set for about 4 hours and cut into bars! *You can also roll this mixture into balls if you prefer.
